Facebook hive mind: your help is needed. Neither Josh nor I particularly care for eggplant. Ive salted and sweated it, grilled it, sauteed it, parmesanned it, and everything else I can think of, and both the texture and flavor remain issues. The grilled was by far the least favorite. I just got two of these charming little vegetables in our csa today and am at a loss. Any ideas for gluten-free, vegetarian recipes that are worth a shot? Thanks!
