Family Fudge Recipe This part is the same for both chocolate and peanut butter fudge: 6 cups sugar ¾ cup corn syrup 1½ cup milk 1 tsp vanilla For chocolate fudge also add 3-4 heaping Tbsp of cocoa Mix ingredients and bring to a boil When it reaches a boil: For chocolate add 1lb. (4 sticks) butter or margarine For peanut butter add ¼ lb. (one stick) of butter or margarine and 1 12oz. jar of peanut butter Now continue to boil, stirring frequently to prevent scorching (especially a problem with peanut butter, I scorch it a little all the time) until when small amount dropped into cup of cold water starts to immediately harden and can be formed into a ball. This is the boring step that can take a while. I never learned how to do it with a candy thermometer so can’t say keep at certain temp for a given amount of time. Once it is ready, remove from heat add approx. 2/3 bag of mini marshmallows or one small jar (think about 8oz.) of marshmallow cream. Place pan of fudge in sink of cold water and whip in marshmallow/marshmallow cream with spoon until completely mixed. The cold water helps the fudge cool down and start to set up. Pour into a greased cookie sheet and allow to set until hard enough to cut. If you cooked it too long it may set up very hard, if too little it will be more like taffy.
