Fan request: CORNBREAD 1 cup white cornmeal 1 cup flour, sifted 1/4 cup sugar (Optional…I never use.) 1 tsp. baking powder 1/2 tsp. baking soda 3/4 tsp. salt 1 egg, beaten 1 cup buttermilk (substitute regular milk if necessary) 5 tbsp. shortening, bacon grease or lard, melted if hard *For a grainier texture make the mixture with 1 and ½ cups cornmeal to ½ cup flour plus the baking powder, baking soad and salt. **If using self-rising cornmeal mix, omit baking powder, baking soda, and salt and increase the cornmeal to 1 and ½ cups and ½ cup flour, however 2 cups of self-rising cornmeal mix gives a more old-fashioned texture. Melt grease in a 10-inch cast iron skillet. Mix dry ingredients together well. In another bowl mix egg, buttermilk and melted fat thoroughly. Mix dry with the wet and Pour into HOT skillet or Hot, greased corn-stick pans. Bake in hot oven (425F degrees) about 20-25 minutes for pone or 10 or 15 minutes for the sticks. ~
