Fancy a curry tonight but want to keep it healthy? Either make your own (try the tasty recipe below) or if getting a take away choose a dish with no sauce or a non cream based tomato sauce, leave the naan bread and rice (if you cant not have rice limit it to 5 mouthfuls) and stick to one poppadom. Of course if you are following my online plan and this is your weekly meal of your choice you can have any curry off the menu! I hope you have fun whatever your choice xx Chicken Curry Serves 4 • 2 Onions, chopped finely • 150g Button Mushrooms, halved • 1 Red Pepper, sliced • 4 cloves of garlic, crushed • 1 red chilli, chopped • 1 tbsp Ginger powder • 1 tbsp salt • 1 ½ tbsp Garam Masala • 6-8 medium tomatoes (Blended) • 1 tbsp Turmeric • 3-4 chicken breasts • 1 ½ tbsp coconut or olive oil 1. Add oil to skillet or Large Pan. 2. Once melted add onion and garlic until browned. 3. Stir in ginger, chillies, tomatoes, tumeric, garam masala and salt. 4. Allow to simmer for 3 minutes. 5. Add Chicken and coat chicken with ingredients. 6. Cook on slow heat for at least 30 – 45 minutes. 7. Add mushrooms and peppers and cook for a further 5 minutes.
