Fatimas Chicken Ahkni Ingredients Chicken pieces ( leave bone on ) 2 onions chopped finely 8 cloves of fresh peeled garlic grated on fine side of grater Big piece of fresh Ginger peeled and grated as well on fine side of grater ( discard stringy bits) 500grams of Basmati rice ( I only use the Spekko brand - rice grain cooks evenly - tried and tested many other brands and Spekko by the best) 6 potatoes peeled and cubed Fresh bunch of coriander Oil to fry potatoes Salt to taste Spices ( I use Spice Mecca ) 4 tablspoons of Ahkni Spice 1 tablespoon of Jeera 1 tablespoon of Tumeric Method Fry onions till golden brown , add spices , salt , chicken , garlic and Ginger , braise for about ten minutes , add one cup of water and cook for 20 minutes . Set aside . Boil basmati rice in water add salt and tumeric or egg yellow to make rice yellow - boil on high heat for Ten minutes - strain and rinse - put aside - fry cubed potatoes - now add rice on top of chicken , then potatoes and a few knobs butter - cook on high heat for five minutes - then turn heat on low - add a big bunch of freshly chopped coriander - give one stir only - Close the pot and walk away ...... Come back in half an hour and dish up (".) Serve with slaai (".)
