Feeling inspired after watching The Great British Bake Off? Follow our recipe to make delicious custard tarts this weekend. Ingredients: 1 pack of shortcrust pastry (or make your own) Custard filling 700ml full fat milk 7 egg yolks 90g caster sugar Freshly grated nutmeg Pre-heat oven to 200C Method: 1. Roll out the pastry and, using an 11cm cutter, cut out 12 discs. 2. To get the tarts out more easy, simply cut strips of baking parchment to create a cross in each tart mould. The pastry should slightly overlap the top of each mould. 3. For the custard, warm the milk but do not boil. 4. In a separate bowl beat together the egg yolks and sugar until pale and creamy. 5. Pour the warmed milk over the egg mixture and stir, creating little bubbles. 6. Pour all the mixture into a jug with a lip and then fill each of the tart cases. 7. Grate a little fresh nutmeg or use a pinch of ground nutmeg on each tart. 8. Bake for 10-15 minutes before reducing the temperature to 180C for a further 10 minutes. 9. The perfect egg custard should have a very slight ‘dome’ to show that it is baked. 10. Leave to cool in the tin for 30 minutes. Use the strips of baking parchment to lift each tart out.
