Feta Cheese- Spinach and Pine Nut Galettes Ingredients Plain Flour- 175g Butter- 110g Feta cheese – 15g Baby spinach- 225g Pine nuts- 25g Nutmeg(grated)- a pinch Parmesan (Grated)- 25g Method 1.Use flour and semi frozen butter, a pinch of salt and sprinkle water to make dough and rest it for 25-30 minutes. 2.Spread the dough into evenly divide circles. 3.Wilt spinach in a pan and drain excess moisture. 4.Place spinach, top with crumbled feta cheese. Sprinkle toasted pine nuts and nutmeg and bake for 10-12 minutes at 220C. 5.Sprinkle parmesan, slice and serve.
