Finally I have found something that can replace bread that makes for holding my sandwich fixings! Rice cakes are fine for open face sandwiches, but Potrabella Mushrooms are bigger and can hold a good burger. I will try this after Thanksgiving. I will flavor and soften up the mushrooms with olive oil and garlic then bake them in the oven. Also they will be ideal to use as a crust for pizza. I will even be as bold as to make a pumpkin pie with a mushroom crust. Since mushrooms absorb flavors, Im betting I can use raw sugar to sweeten the Portabella. I will give it a try to see if it works.
