Finally tried the grand experiment Ive been proposing to myself: eating oatmeal as a savory side dish to eggs and breakfast meat instead of grits. Grits are made from hominy which is a more simple and less fiber contained carbohydrate than oats. Its hard to love grits like I do and give them up. Since grits are largely a product of the Scotch Irish oatmeal culture transferred to the southern United States, I thought I would try out this as a substitute. I asked for oatmeal with lots of butter and salt and pepper and scooped it on my plate with eggs over easy and (a little) sausage and I used the oatmeal to gather the egg runoff like I do with grits.
