First time ko po magpost dito :) -- I am a homebaker, and been baking for 5 yrs already. Pero hindi ko gusto ung masyadong sweet sa mga bake goods ko, so if you want sweeter, you can try adjusting the sugar level on my recipes. Enjoy! My Homemade Brazo de Mercedes (good for 4-5 serving) Filling: 5 egg yolks 1/4 cup condensed milk 1/4 cup evap milk 1/2 tsp vanilla extract (optional) 1) In a small saucepan, combine all ingredients except vanilla extract, stir until combined. 2) Heat on the stove (with the lowest heat possible) stirring continuously until very thick, it took me 15-20mins, and I use a silicone spatula. 3) Remove from the heat and set aside. Meringue: 3 egg whites (or 4 if you want a thicker meringue) 1/4 cup white sugar Cream of tartar (if you dont have this, then its ok NOT to use this.) 1) With a mixer, whisk the egg whites (and CoT) until frothy. 2) Add the sugar slowly until stiff peaks form. Meringue should be glossy. DO NOT OVERBEAT!!! 2) Spread the meringue in a cookie sheet with a parchment paper until you form an 8x10 rectangle, and should be atleast 1 to 1.5 thick. 3) Use a big fork to decorate the top, (if you want)! 4) Bake in a PREHEATED 350F (180C) oven, for 12-15mins. The top should be browned and springs back when touched. 5) When done, remove from the oven and sprinkle (using a wire strainer) the whole top with powdered sugar. 6) To turn it upside down, use another piece of parchment paper or wax paper or a lint-free cloth, put it on top of the meringue, and immediately flip it. VERY CAREFULLY peel off the parchment paper stuck on the it. 7) Spread the cooled filling and roll the meringue carefully. Enjoy ! :)
