Fish with sour cream, mushrooms and onions This is an Eastern European dish- very simple and very flavorful. You can use any fresh, white, flaky fish from your market. This recipe makes enough for two, but is easy to double. 1 lb fish filets (true cod, halibut, etc) 4 oz cremini mushrooms, sliced ½ yellow onion, thinly sliced 1 tbl unsalted butter 1/2 c sour cream Olive oil for cooking 3 tbl parmesan cheese, grated 2tbl plain breadcrumbs Handful of chopped fresh parsley Preheat oven to 350 degrees. Pat fish dry with paper towel and season lightly with salt and pepper. Heat 1 tbl butter and 1 tbl olive oil over medium-high heat in a medium saucepan. Add onions and mushrooms, season with salt and pepper, and cook for 5-6 minutes until onions are translucent and mushrooms are lightly browned. Remove from heat. Mix sour cream with grated parmesan cheese and spread evenly over fish filets. Sprinkle breadcrumbs over fish filets and place in oven and cook for 25-30 minutes (time will differ depending on thickness of fish). Remove fish from oven and top with mushroom mixture. Sprinkle cooked filets with chopped parsley. This is a wonderful dish to serve alongside a simple salad of hearty mixed greens and beets Pics to follow!
