Flavours Of The World 007 : Matar Paneer : Preparation Time: 10 mins Cooking Time: 25 mins Makes: 4 servings Ingredients: Cottage Cheese- 250 gms Peas(fresh/frozen)- 1 cup Ginger- 1 inch Garlic- 6-7 cloves Paste of 2 onion Paste of 3 Tomatoes Bay leaves- 1 Black Cardamom- 2 Cloves- 3-4 Cinnamon- 1/2 piece Cumin seeds-1 tsp Red chilly powder - 1/2 tsp Coriander powder- 2tsp Garam Masala - 1 tsp Fresh cream - 2 tbsp Water- 1/2 cup Lemon juice- 1 tsp Salt to taste Ghee/oil- 2 tbsp(for cooking) Oil for frying .. Method: 1. Cut the paneer into half inch cubes. Heat the oil in a wok and deep fry or shallow fry the paneer cubes on medium flame till they turn golden from all sides and drain them on absorbent paper. Keep it aside. 2. Make a paste of ginger and garlic. Keep it aside 3. Heat 2 tbsp of ghee/oil in a pan, add bay leaf, cloves, black cardamom and cinnamon stick, fry for 10 seconds. 4. Afterwards, add cumin seeds, when the cumin seeds crackle, add ginger garlic paste and sauté for a min. 5. Add the onion paste and saute till it turns golden brown. 6. Now add tomato paste and sauté till oil separates. Stir occasionally. 7. Add Red chilli powder, coriander powder, garam masala, mix well and simmer for some time. 8. Add cream and cook for 2 min and now add green peas along with 1/2 cup of water and covered the pan. Cook on medium heat till the peas are tender or till the gravy thickens. 9. Add paneer and salt to the curry, mix well. Put the flame off and add lemon juice. 10. Garnish with coriander and serve hot with roti, paratha or rice. NOTE: Paneer pieces can also be added without frying to the gravy.If you dont mind consuming little oil, go for fried paneer since it tastes better.
