Focaccia Sweet Potato Bread: 3 medium sweet potatoes. Boil in some water for 15 minutes. Drain 130 mls or so of the water and keep to one side. Mash the sweet potatoes with 3 tablespoons of olive oil. In a separate bowl mix 300 grams of spelt flour, 1 teaspoon of salt and one teaspoon of bi carb as well as one tablespoon of rosemary Add the potatoes to the flour and mix. Add the 130 mls of water or whatever you need to get it to a good consistency. Need for a few minutes in a little olive oil. Leave to one side for an oil in some cling film. Place in a greased tin. Top with more rosemary and whatever else you want. Bake at 170 for 40 minutes or until nice and golden.
