Food & Beverage Manager WinnaVegas Casino Resort Sloan, Iowa 51055 United States See All Jobs Share this job posting: Share on facebookShare on linkedinShare on twitterShare on stumbleuponMore Sharing Services -------------------------------------------------------------------------------- Description The Food and Beverage Manager will be responsible for overseeing and managing all aspects of the restaurant/bar/kitchen/snack bar operations. This includes preparing all operational budgets; achieving sales and profit levels, maintaining the restaurant’s theme format and commitment to the casino’s standards of excellence. Duties include, but are not limited to: A. SALES VOLUME 1.Interface with the General Manager and to develop monthly and annual sales plans and projections. 2.Monitor sales against projections and, if needed, recommend alternative action to bring the restaurant up to projected volume. 3.Work with support staff to seek out ways to improve sales. 4.Constantly monitor the overall operation that affect sales including guest satisfaction, food and beverage quality, ambiance, cleanliness, promotions and service standards. 5.Provide sales volume figures with department director on a regular basis. B. PROFIT 1.Interface with the Controller and to prepare and achieve monthly and annual plans and budgets as it relates to fixed and controlled expenses. 2.Directly responsible for establishing and achieving budgeted labor and product costs. This includes food, liquor, labor and inventory controls. 3.Monitor results against projected budgets and to recommend corrective action when necessary. C. PERSONNEL 1.Supervise, coach, counsel, develop, train, recruit and recommend corrective action ror Food and Beverage employees. 2.Monitor attitudes, morale and management effectiveness through direct contact with supervisors and individual staff members. 3.Monitor employee turnover and training. 4.Oversee the effective documentation of employee disciplinary action and termination. 5.Establish, monitor and update all performance guidelines and operation goals and objectives. 6.Continuously monitor the status of new hires with supervisory staff. 7.Delegate duties, responsibilities and projects to individual supervisors and hold each supervisor responsible for the execution and completion of those duties. 8.Plan and organize all mandatory staff and departmental meetings. 9.Oversee and monitor departmental staffing pars. 10.Hire all Food & Beverage personnel. 11.Perform performance reviews. 12.Assist with wage and performance guidelines within the department. 13.Ensure that all department schedules are posted by due dates. 14.Ensure that all staff are following established quality assurance guidelines. 15.Update all training and testing materials. 16.Update and revise supervisor shift duties and responsibilities. D. ADMINISTRATIVE AND ACCOUNTING 1.Interface with the General Manager to review monthly profit and loss statements. 2.Oversee the accuracy of daily management duties such as server banking, cash handling, overages/shortages. Daily Revenue reports, Daily Sales Reconciliation reports, paid, etc. 3.Oversee the execution of the physical and liquor inventories. E. OPERATIONAL DUTIES 1.Cover floor shifts as needed. 2.Execute all opening, closing and other shift duties when needed. 3.Review the scheduling of the staff. 4.Interface with the computer cash register (H.S.I.) as it relates to programming and other functions. Requirements GAMING INDUSTRY EXPERIENCE IS PREFERRED A degree from an accredited college or university in Hotel, Restaurant & Institution Management 1.Minimum five years experience in a Food and Beverage management position 2.Must be able to obtain gaming license -------------------------------------------------------------------------------- Additional Information All applicants must be able to demonstrate their US work authorization during the employment verification process.
