Food Expiration Dates Another Federal/Corporate (Fascist) Scam We have 12 jars of mayonnaise in our pantry; I just now opened one we bought in May of last year. I wanted to see if there was a pattern on the expiration dates given on the different jars. We typically buy 1 jar of mayo every month. My jar of May 2013 mayonnaise has a listed expiration date of October of 2013; I checked all the other jars and sure enough, they all range from a 4 to a 6 month expiration period from the month we purchased them; yes, all our pantry food is dated and rotated. Weve been stocking our pantry for 4 years. Since this mayonnaise is now 7 months past its expiration date, its not recommended to consume, right? We have cans of spaghetti sauce that are more than 2 years past their due date, cans of green beans over a year past their expiration date; and we even have coffee thats nearly 2 years on the shelf since we bought it. Like medicine, the expiration dates on many food items is simply a marketing gimmick to get you to use it up faster, throw it away sooner, and spend more money in less time than you realistically have to. Dont try this with just any stored foods; were still figuring out advantages and disadvantages of stocking certain foods and certain amounts; I can tell you that coffee much past its expiration date, doesnt give off that house warming aroma when youre brewing it, but it still tastes the same and still has its powerful magic in the mornings. Canning and Dehydrating foods have become indispensable tools that we take advantage of every month; Darlene is currently dehydrating 2 bags of kale, that we will later grind into powder. Powdered Celery and Carrots makes an awesome seasoning for chicken dishes; I even made my own Taco seasoning. Weve pretty much cut out sugary snacks and treats; and were narrowing down our processed foods. Having grown up on a lot of farms, much of this was old hat to me. One of our next food storage goals is to get a vacuum sealer machine; and plenty of bags. We bought jalapeno peppers every month for 3 months before we finally had enough dried and powdered for a 16 ounce jar; talk about burning your nostrils, yikes. Weve got dehydrated: onion, 2 types of squash, potatoes, green peppers, tomatoes, green onion, garlic; Darlene makes her own bread crumbs and weve probably got 10 lbs of chicken, turkey and ground turkey canned up in jars. I am down to less than 2 gallons of chili though; and thats gotta change soon.
