For Lisa Bernstein Coyne I have made this a lot and love it: Garden Quiche 8 oz. shredded swiss cheese 4 oz. sliced mushrooms 1 small chopped onion 1 chopped medium green pepper 4 eggs 1 cup heavy cream (I use Half and Half) 1 tsp. salt 1 Tbls. chopped parsley 5 drops hot sauce unbaked pie crust Bake pie crust that has been pricked for 8-10 minutes at 450. Layer half the cheese, the mushrooms, onion and green pepper. Beat eggs with mixer for 2 minutes, then add cream, salt, parsley and hot sauce. Beat for 1 minute more. Pour into shell, top with remaining cheese and bake at 350 for 35-40 minutes or until knife inserted in center comes out clean.
