For Machiko Koizuka Deluxe Carrot Cake 3/4 cup S.R. Flour 1/2 cup brown sugar 1/2 cup Plain Flour1 1 1/2 cups grated carrot 1/2 teaspoon bi-carb 1/2 cup oil 1 teaspoon nutmeg 2 eggs 1 teaspoon cinnamon 1/2 cup sour cream 1/4 cup chopped pecans 1/2 cup dried cranberries or sultanas Sift dry ingredients into a bowl, stir in sugar, carrot, pecans and dried fruit. Combine oil, eggs and sour cream, stir into floured mixture. Pout into greased and lined tin, bake in moderate oven (180C/360F) 50 minutes. Cool in tin for 10 minutesl, turn onto wire rack. Cream Chees Frosting 60grams (2oz) packaged cream cheese 30 grams (1 oz) 1 tsp lemon rind 1 1/2 cups icing sugar ..............Have butter and cream cheese at room temperature. Beat butter, cheese and lemone rind in small bowl until smooth and creamy. Gradually beat in icing sugtar.
