For Modern Love Omahas one month anniversary I would like to offer some thoughts/advice on opening a restaurant. 1) Figure out all the technical stuff way in advance - our biggest issues were with our point-of-sale system and our reservation system; it was very hectic to have to troubleshoot those things during service. 2) Good help is really hard to find so when you do find it, hold on tight and appreciate. Sorry for the cliche but its the truest truth. 3) Just because you loooove baking/cooking does not mean you will love it in a commercial setting. Its a whole nother thing. Make sure you hire people that understand this as per lesson 2, and make sure you know what your limits are. 4) You can never have too many microfiber cloths. 5) The best part of everything is the local suppliers and the customers. Take time to talk to and appreciate both, otherwise all the hard work wont seem worth it because youre only seeing the problems and stresses. My favorite part of the day is when our local produce arrives! 6) Be ready to change your mind at every given moment. The stuff you think is soooo important might not be once you get going. For instance, I was stressing so hard on our baby policy, now Im just like whatevs. So have ideas about things like that, but be ready to be surprised at how it might not ultimately matter. 7) You can never have too many Cambros. 8) Etsy is the best for cute stuff that you just need a few of (milk glass vases and business card holders for instances) Also, you WILL need a few really long spoons. 9) You dont really need a bathroom sign. OK, you do, but we still dont have one. 10) Your feet will never be the same, but sitting is really bad for you anyway.
