For SF Restaurant Week #SFRW Jan 21-30 we are focusing on the prominent culinary region of Hyderabad with several new dishes! The historic city of Hyderabad is now the shared capital of two states of modern India, Andhra Pradesh and Telangana. It was established in 1591 and a hundred years later came under the influence of the Mughals from the regions of Persia and Turkey. From the early 1700’s to the end of WWII it was ruled by a dynasty known as the Nizams, or princes, of Hyderabad whose kitchens greatly influenced the cuisine of the region. The luxurious dishes were a composite of local Hindu spices and cooking techniques, combined with the roasting of meat from the Arab world and the culinary customs of the Muslim rulers. The biryani, a rice-based dish, is a signature from this region and goat is a popular meat that is marinated and cooked for hours to enhance its flavors. As the Mughal Empire spread across India it influenced the cuisine of Hyderabad in the heart of South by sharing ingredients and techniques from the North such as wheat-based breads, dairy and the use of cumin and chiles.
