For daddy dear I baked this cupcakes.After one whole year of punishment he got me a blender.After three of our blenders broke down at once last Ramadhan. This was my way of saying him a thank you and also my culinary genius aunt is here.So baked this lovely fluffy velvety goodness Red velvet cupcakes with butter cream frosting *Ooo and let me tell you guys while developing the buttercream recipe Roena apu helped me a lot she is a cooking genius I must say.Thank you sooo much apu. Red velvet cakes Ingredients *4 large eggs *3/4 cup vegetable oil *1/1/4 cup caster sugar *1 cup of buttermilk *1 tsp of vanilla essence *1/4 cup of unsweetened dark cocoa powder ( Hersheys is the brand found abundant in Bangladesh) *1/1/2 cup of all purpose flour *1 tsp baking powder *1 tsp baking soda *2 tbsp fresh lime juice or vinegar *3 tbsp red food colour (quantity might vary from different brand) Procedure 1.Beat together eggs ,sugar,oil and essence then the buttermilk. 2.Beat in the cocoa,flour and baking powder. And then the food colour 3.Mix the baking soda with the lime juice or vinegar it will effervescence (means fena uthbe) and instantly beat it in the mixture dont delay,Other wise your cake wont rise properly if all the bubble will die out. Try to use lime juice if you have because the flavour will come brilliant. 4.Grease your muffin pans and pour the mixture filled 3/4th of the pan bake it in a preheated 180 C oven for around 15 to 20 minutes. Once out of the oven cool the cupcakes for frosting. Buttercream frosting Ingredients *100 gm cold salted butter (people says to use unsalted but I find the salt flavour more accepted and also I find it less richer) *2 cups of sifted icing sugar *About 5 tbsp of milk *1/2 tsp of vanilla Procedure 1.Beat the butter till it breaks and no chunks available then beat in the icing sugar add your vanilla and then add milk to bring it to your desired consistency now you might dont need to add milk or you might need to add even more than 5 tbsp it all depends on your beating speed,temperature and the quality of your products.Chill it before use and give it a single beating. before use. Then pipe in over your cuppies I piped simple rosettes over mine ******Those who dont know how to prepare buttermilk to 1 cup of milk add 1 tsp of vinegar or lime juice or lemon juice.Give it a mix and let it stand for 5 minutes then use it. Precautions *Dont skip any ingredients for the cake or else your cake wont come together. Yields:36 miniature cupcakes :D
