For many, the post workout meal is on the run, in the car or on the way to work. A lot of my clients ask me of ways to get in their yams (sweet potato) post workout along with their protein. This is one of my favourite go-to recipes, and are just as good rolled up, sprinkled with cinnamon and cold. I suggest when lifting heavier to get in those starchy carbs post workout to replenish your depleted glycogen stores! Happy Lifting, Happy eating:) Coach Sweet Potato Pancakes Makes 1 Serving *1/3 cup mashed sweet potato (baked + mashed) *3 egg whites *1 tablespoon coconut flour cinnamon, liquid chocolate flavor stevia or other spices (optional) Method 1. Mix your mashed sweet potato and egg whites well. I use my mini bullet or blender. 2. When all mixed well, add coconut flour (may need a drop of water for consistency) 3. Pour mixture 1/4 cup at a time onto a heated skillet. You may have to move pan around to spread. Sometimes I will make one big "crepe" 4. Cook over med-high heat until golden 5. Serve with coconut oil smeared on top and cinnamon or boiled down fruit compote ENJOY!
