For my dear friend Anjie David, and others who have asked, from Mario Batalis new cookbook here is the Tomato Sauce recipe: Basic Tomato Sauce 1/4 Cup of extra virgin olive oil 1 large Spanish Onion, cut into 1/4 dices 4 cloves fresh garlic, thinly sliced 1 tablespoon chopped fresh thyme leaves, or 1 teaspoon dried 1/2 medium carrot, finely shredded 2 (28-ounce) cans of Marzano tomatoes, carefully crushed by hand, juices reserved Kosher salt In 3-quart saucepan, heat olive oil over medium heat. Add the onion and garlic and cook still soft golden brown, 8-10 minutes. Add the thyme and carrot and cook for 5 mins more, until carrot is quite soft. Add tomatoes and their juices and bring to a boil, stirring often. Reduce the heat to maintain a simmer and cook for 30 mins, until as thick as hot cereal. Season with the Kosher salt. The sauce will keep in an air-tight container in the fridge for up to one week, or in the freezer for up to 6 months. Youre welcome! :O~)
