For my first attempt at seafood chowder I think I did okay. Heres what I did: 1 onion, chopped fine 1 tsp of garlic, chopped fine 1 tsp of basil 1/3 cup of butter Saute all of the above ingredients in a large pot, until onions are translucent. Add 2 diced up carrots to the mix and saute for 5 mins. Add 2 large, diced, potatoes and saute for another 5 mins. Add 2 cups of water, cover & simmer for 5 - 8 mins or until carrots and potatoes are tender. While the above is simmering, whisk 1/3 cup of all purpose flour into 1 1/2 cups of 10% cream & 1 1/2 cups of 2% milk. Whisk well and stir into veggie mixture above. Stir well and simmer for 5 mins. Add fish of your choice cut into bite size pieces. I used a chowder pack I bought at the grocery store, it had haddock, shrimp & lobster bits in it. Cook for another 5 - 10 mins or until chowder is think and veggies are fork tender.
