For my small meatballs for my wedding soup I mixed the following in a big bowl 1pd of ground beef 1 egg 1cup of bread crumbs(I used whole wheat crackers and made my own) 1/2 cup of parmesan cheese 1TBS of chopped fresh parsley 1 tsp of garlic powder 1/2 tsp of oregano 1/4 tsp of salt and lots of fresh pepper.I will bake my meatballs in a preheated oven of 350 degrees for 15 minutes then put them in my chicken stock.You can put them in raw but I like to get some off the fat out of the meat so thats why I bake mine first.
