For the first 11 days of the 21-Day Purification Program, I have had to eliminate meat and fish from my diet. Although this has been quite a difficult task for me, it has allowed me to think outside the box when meal planning! The following recipe is one I have used recently. For as well as I have eaten these past 10days, I am still looking forward to tomorrow, my DAY 11! Mock Tuna Salad 1 cup sunflower seeds, soaked 1/2 teaspoon ground mustard 1⁄4 cup celery, chopped 1/4 cup carrots, chopped 2 tablespoons onion, chopped 1 clove garlic, minced 2 tablespoons fresh lemon juice 1 tablespoon dulse (seaweed) flakes Place all ingredients in a food processor and pulse to the point of having small chunks. Serve with crackers (recipe to follow) or on top of a fresh green salad. Serves 2-4.
