For those on a gluten free and wheat free diet!!!! Absolutely AWESOME!!!!!! A definite Keeper! (Original Recipe by Richard Porter) Gluten Free, Wheat Free, Sugar Free, Nut Free, Vegetarian Ingredients for Pizza Base 2 Eggs 250gms (1 cup) Softened low fat Cream Cheese 2 cloves fresh garlic (crushed) 60gms (2 oz) Finely grated Parmesan Cheese 1 tspn Mixed Herbs Salt and Pepper to taste Cooking spray Pre-heat Oven to 180 C (350 F) Spray a flat casserole or baking dish (we used a small square glass roaster) Prepare base, add all the above ingredients into a mixer or blender and mix until smooth, spread evenly over base of dish and place in oven. Bake for 10 - 15 minutes or until golden brown all over, you may need to turn the dish during baking to ensure even colouring and cooking. Remove from oven and allow to cool while you prepare the topping. Top with any combination of your choice and return to the oven for This one was a vegetarian option. Our topping on this one 1/2 cup of Parma sauce (or Pizza sauce) 1/2 small red onion finely sliced 6 sundried tomato halves cut in half 12 marinated Bell Pepper strips 100gms low fat Pizza Blend Cheese Garlic Powder (Oregano, Onion Powder would also work well) Finely sliced Zucchini 4 finely sliced button mushrooms 12 Olives cut in half 60gms (2 oz) Feta Cheese Spread sauce evenly all over base using the back of a spoon Sprinkle Pizza Cheese all over, place other ingredients evenly over base, finish with crumbled Feta.
