For those that wanted that Zucchini Casserole. Now i did not have my mothers recipe in front I me, so I am going by memory. Ingredients: Makes 13x9 pan or more. Ingredients: 2 boxes of stuffing mix, 1 onion, I container of sour cream, 2 cans of cream of mushroom soup, 2 3 cups of zucchini, half cup of veg oil, 4 eggs. Mix the stuffing, sour cream and soup together, then add the oil and eggs, mix together again, add zucchini mix, then put in a pan and bake 350 for 25 minute. Enjoy!!!!!
