For those you are curious about having a go at making a cake in the slow cooker..... I have been cheating lately and using packet mixes. The good thing is baking a cake in the slow cooker doesnt dry out like they do in the oven so you can get away with a cheap brand. I used black and gold vanilla cake mix here but i have also used the chocolate one with choc chips or mm minnies added to the top. Make the cake mix according to the pack UNLESS you plan on adding extra ingredients (ie, choc chips, mm minnies, chopped strawberries). If you are adding extra ingredients you need to add less liquid to make the batter more dense to help prevent everything sinking to the bottom. So instead of using 2/3c milk i used 1/2c milk. Do not mix extra ingredients into the batter!!! Pour the batter into a tall cake tin that has been sprayed with oil. Now gently add your extra ingredient to the top of the cake. I added strawberries. This cake is cooking for a little while and gravity will take over. The lumps of strawberries (or choc bits) will slowly sink throughout the cake during cooking. Place the cake tin into the slow cooker. Cover the cooker with a tea towel to absorb the condensation then place on the lid. Gently pull at the sides of the tea towel till its pulled flat. Turn the slow cooker on and set to high. Cook for 1.5 hrs. When the time is up carefully check the cake. If it still has a bit of liquid in the middle cook for another 10-20 mins as needed. If it does not sink when carefully touching in the middle the cake is done (there will be a film of moisture on top from cooking). Take the cake out of the oven and place onto cooling rack. After a few minutes when the tin has cooled down you can gently remove the cake from the tin and allow to fully cool down on the rack. You will notice that all of the cake rises evenly. There is no mountain in the middle with shallow sides. This makes the whole cake taller. When cake is cooled down decorate as you please, then serve :)
