Freeze fresh green beans to enjoy later. It’s an easy way to take advantage of summer’s abundance. Select fresh, firm, organically grown green beans. Wash them, trim the ends, and cut into evenly sized pieces. Drop the beans in boiling water, and blanch for about 3 minutes, then transfer the beans to a bowl of ice water to stop the cooking. Don’t skip this step, because blanching destroys any enzymes or bacteria that could cause spoiling. Then simply pack the drained beans in plastic bags and freeze. —Asha
