Frementation update! I took Klaus 3.2 out of the jar, added fresh cabbage, apples, etc. to the bottom and then put the old kraut back on too. Double decker Kraut! Then, I started a brand new kraut with cabbage, carrots, ginger, turmeric and red pepper--Klauskutta. Phyllis Dillers are doing fascinating things, and Im letting some red wine stand out (the crock covered in cheese cloth) to turn it into wine vinegar. :) full house!
