French Bread Ingredients 2 cups water, lukewarm (not hot) 2 packets yeast 2 Tsp salt 4-5 cups flour Butter Corn meal Optional: 60 minute walk Butter (for soft top after baking) 1 egg white (for hard shiny top before baking) 2 Tsp sesame seeds (top buns before baking) Directions Place the water and yeast in the bowl mix with fork, salt, pour 2 cups flour, mix with fork, add the rest of flour slowly & knead until a dough starts to form a smooth, firm, elastic dough (knead it as if, making flour tortilla dough). Place the dough in a bowl. Cover bowl with towel & set aside until doubled in size. (you dont need to watch it, so go for an 30 min or more walk somewhere & walk back for 30 minutes or more or go shopping). Remove the towel, punch the dough down & start shaping dough by making balls & taper them at the ends like a snake!!! Makes about 12 (bolillos) buns. The dough should be elongated and oval-shaped, with tapered and rounded (not pointed ends). Cut slits Italian long slice in the middle or French 3 slices at an angle or is it the other way around, hmmm😏 Place the dough on buttered pan & sprinkle with corn meal. Allow the dough to rise for another hour or two. (you can go for another 30 minutes or more to & from or until it doubles in size! This is a poor mans bread, but delicious & hard dough for pizza or pretzels!!! Bake the dough until it is golden brown @ 425 degrees for about 30 min.
