Fresh Tomato Soup: I still have a bunch of tomatoes to use, and love tomato soup. I have never had a good recipe, except for now! Thanks Colleen for the chat and inspiration! Fill the pot you want to cook the soup in with fresh tomatoes, squashed a bit so there is some juice. Roughly cut up one stalk of celery, 1 medium onion, about a cup of roughly chopped carrots, and about 2 small beets. Cook until all the vegetables are really soft, and tomatoes have reduced quite a bit. (you could use canned tomatoes too, I would estimate about 2 cans). Using an immersion blender, buzz until very smooth. Add 2 cups chicken stock. (or put in a real blender). Add about 1/3 c sugar and a good 2-4 tsp salt. You need to taste. If you still have very acidy tomatoes, add more sugar, and then balance out with salt. Sugar and salt measurements are only guidelines, you will need to taste it! Add pepper to taste (only about 1/2 tsp), and 2 tbsp Herb and Garlic Dip mix. Keep warm. Just before serving stir in 1/2 c parm cheese. You can also add some sour cream or plain yoghurt in your bowl (the kids love it like this). I added some black beans to this soup, to make it a more complete meal. Would also be really good if you had leftover ham to throw in. But in all honesty, just the plain tomato soup was amazing!
