Friend Michele Tapia sent me the following message (copied here with her permission): I have a challenge for you should you choose to accept it. I read you say that youve found something vegan to eat in every restaurant that youve visited. I normally can too. I have a work get together and this is the restaurant that theyve chosen. I called the place to ask about the sauce and they said its made with a meat base and cheese and the marinara has a chicken base. Why would anyone do that???? Anyway...what the heLL am I gonna eat? Wondering what youll come up with. Welp, Michele. This was a tough one. But after looking at the menu, I think Im going with penne pasta lightly drizzled with a very good quality olive oil and just a squeeze of lemon, a dash of salt, Italian herbs, and some cracked black pepper. Top it with sautéed vegetables--I see red peppers, broccoli, and mushrooms in their menu. If youre adventurous, splash just a *little* balsamic vinegar on there. Or have a ramekin of it served on the side. Much more authentically Italian than meat-topped meat covered in cheese. And most places can be convinced to go generous on the veggies when you sub out meat. Thanks for messaging me. And thanks for taking your ethics with you everywhere you go!
