From baby to mamma, youll all be happy! Heres my healthy version of {Apple, Blueberry & Cinnamon Crumble} even as good without cinnamon. 500g apples Handful of blueberries { can be frozen } Agave Raw sugar 1/2 cup of dried oats 1/4 cup of spelt flour { or your choice of flour} 1/2 tsp baking powder Coconut oil Cinnamon 1/2 tsp vanilla Water Preheat your oven to 200c / 390f. Peel and cut the apples into little cubes. Then add them to a saucepan with a teaspoon of coconut oil, the blueberries, vanilla, 1 tsp raw sugar, 2 tablespoons of water and a pinch of cinnamon. {If you want the end result to be very saucy add a little more water }. Mix and cover with a lid, checking and stiring every few minutes. The fruit will take about 10 minutes to cook on medium heat, you want the apples to be soft but still hold their shape. In a bowl combine you flour, oats, baking powder, 1 tsp raw sugar, 2 tsp agave, 2 tbsp of coconut oil and a pinch of cinnamon. You want to mix this with your hands, and be able to press the mixture together and most of it hold. If its too dry add a little more coconut oil. Place the fruit in a dish or in individual muffin cases. Cover with the crumble mixture and place in the oven, uncovered for 20 mintues, till golden brown. Best served warm with vanilla icecream but just as good when cooled. Enjoy.
