From our WVTF Veggie Chef... A lot of people make vows to change the way they eat at this time of year. If your resolution involves transitioning to a plant based diet, I can offer a few tips and recipes. Let’s start with breakfast. Smoothies are a great way to knock out 3-4 servings of fruits and veggies right at the beginning of your day. They are also readily adaptable to your individual tastes and easy to make. One of my favorites is below. Morning Happiness (serves 1) 1 medium frozen banana ½ a peeled mango ½ inch piece peeled ginger 1 small chopped carrot 1 cup kale* 1 TB chia seeds** 1 cup almond or coconut milk (or whichever non-dairy milk you prefer) Break banana into four or five pieces and throw into blender followed by everything else. Let it all sit for a few minutes to soften chia seeds before blending. See Veggie Chef on WVTF.org for more breakfast ideas. For lunch, when you’re on the go, nothing beats a wrap. Try adding homemade hummus and veggies for a quick, tasty wrap. See the hummus recipe below. Roasted Red Pepper Hummus 1 15 oz can chickpeas, rinsed and drained 1 clove garlic, peeled 1 tsp ground cumin juice from half a lemon 1/3 cup roasted red pepper 1 TB nutritional yeast ¼ cup olive oil salt to taste Place all ingredients in food processor scraping sides as needed. Blend until smooth. When it is dinner time, you don’t have to rely only on the standard meat and potato style meal. Have you ever been at a restaurant and thought “I can make a meal of the sides?” Why put the veggies on the side? Make them the main event at your house. You can make dinner completely in the oven by making roasted sweet potatoes, roasted cabbage and/or cauliflower and barbecue baked tofu. See Veggie Chef on WVTF.org for additional dinner ideas. If you’re looking for more ideas, vegan books, websites and magazines are ever more plentiful all the time. For cookbooks, try looking up Isa Chandra Moskowitz. Her newest book Isa Does It has lots of easy and delicious recipes as does her website, theppk. The magazine, Vegetarian Times, and its website vegatariantimes are also great resources. More of my favorite recipe spots will also be on WVTF.org. However, the best tip I can offer when going vegetarian or vegan is to be open minded and willing to experiment. How do you know you don’t like roasted cabbage that’s sweet and crispy at the edges if you’ve never tried it? Have you ever thrown sweet potato or peaches on the grill?
