From the non-Celiac gluten-free folks who have seen improvement with the removal of gluten from their diets. As a mother of several children who have celiac disease and a husband who carries the gene predisposing our children to it, we know the difficulty of living GF...and EF...and DF and the judgment and lack of social caring that comes when you have a disease process that has to involve restriction of certain foods that most others find incredibly enjoyable. While I still think we are just beginning to scratch at the surface of what really is causing all these sensitivities, allergies, and inflammatory gut issues - even in families who have chosen to eat food not processed to the end of its nutritional benefit, no or limited vax, and a lifestyle full of healthy things - I dont think the answer is to ridicule, diminish, or dismiss the improvements some see from limiting certain foods for a time period or a long period. At the same time, I definitely want to speak up for the author of the recent study that brought gluten sensitivity into question, in that I dont think he was saying gluten sensitivity is all in the head in the way we traditionally look at all in the head. And I hesitated to address this here because thats a whole nother long conversation. As to how to handle one anothers food choices...let she who eats wheat eat wheat, please no judgment or banners waving about the foolishness of such behavior, and let she who eats gluten free eat gluten free, please no judgment or banners waving about how idolatrous and nutty these folks are choosing to be. A little grace could go a long way. And yes, Im talking to you if youve been yammering about folks who talk about food and make different choices than you, because, well, you talk a lot about food, too, and make different choices from others. Its food, people. God can grant nourishment from the same food eaten every day all day for 40 years, so Im fairly certain He can handle it if we can eat gluten or we cant eat gluten.
