Fruity Fresh Home-Made Cordial (foodloversrcipes) These fruity flavours are especially useful for summer entertaining ZESTY LIME CORDIAL Makes about 1 litre Preparation Time 45 minutes Cooking Time 10 minutes 1kg sugar Juice and grated zest of 8 limes 15ml citric acid powder 1 Put the sugar into a saucepan with 500ml water. Bring to the boil and stir until dissolved. Allow to simmer for five minutes. 2 Add the lime juice and citric acid. Set aside to cool. Once almost cool, add the lime zest. Set aside for two or three hours. 3 Pour through a muslin cloth to strain. Use a funnel to pour the cordial into sterilised bottles. Seal and label. Serve diluted with chilled water or soda water, or add to a cocktail. POMEGRANATE AND STRAWBERRY CORDIAL Makes about 1 litre Preparation Time 45 minutes Cooking Time 10 minutes 1kg sugar 140g pomegranate seeds 250g fresh strawberries, washed, hulled and chopped 5ml citric acid 5ml grated lemon zest 1 Put the sugar into a saucepan with 500ml water. Bring to the boil and stir until dissolved. 2 Add the pomegranate seeds and strawberries. Simmer gently for 5 minutes then remove from the heat. 3 Stir in the citric acid and lemon zest and set aside to cool completely. 4 Pour through a muslin cloth to strain.
