Ful Medammes: Considered by many as the national food of Egypt this nutritous dish of cooked and mashed fava beans served with vegetable oil (EVOO if youre fancy), cumin and optionally (not really) with chopped parsley, onion, garlic, and lemon juice. We like to put hot sauce or ground aleppo peppers in ours. The dish is sold all over the streets of Cairo but mainly because it is a) delicious b) very filling and c) cheap. it is crazy easy to make but takes some practice to make well and with your own personal taste.
