Funny. This is EXACTLY what got me thinking about wheat when I went to Italy (and found I had NO reaction to anything - pasta, pastries, pizza, and more). Have a read if youre interested in wheat, gluten, and food allergies. Note that this is not an article claiming that gluten allergies dont exist. Celiac Disease is a legitimate thing and it sucks for those who have it. But is gluten allergy as common as we think, or is something else at play? Emails from folks with allergic or digestive issues to wheat in the United States experienced no symptoms whatsoever when they tried eating pasta on vacation in Italy. I reasoned that it couldn’t be the gluten or wheat hybridization. Gluten and wheat hybrids have been consumed for thousands of years. It just didn’t make sense that this could be the reason for so many people suddenly having problems with wheat and gluten in general in the past 5-10 years.
