Fylo pastry scrambled tofu mushroom pie - in one word- delicious!:) Youll need: 1 pack 500gr fylo pastry 1 red onion 1 golden onion 300gr of chopped mushrooms 2 handfulls chopped fresh parsley 1 teaspon oregano 1 pack tofu (200gr) A bit of oil A bit of soy cream to spread on top Method: In a pan,stir fry the onions,then when almost done add the parsley and the mushrooms,oregano,salt and pepper to taste.When mushrooms start to change the color and loose water add the crumbled tofu and continue cooking(marinating) on low heat for the next 10min.The filling is then done. Take a sheet of fylo pastry and sprinkle it with oil.Then put the second sheet on top,then the third sheet.Spread the filling all over the last,third sheet and roll it all up.Put the roll on the baking sheet lined with parchment paper(or just oil the baking sheet instead). I ended up with 4 rolls and used all of the filling. Spread some soy cooking cream on top of the rolls,sprinkle them with a bit of salt and bake in a preheated oven at 190C for around 15-20min,or until golden:) Remove from the oven and let it sit for 15min- it will cool off a bit and will become a bit juicier then when first removed from the oven.
