Gajar Halva 6 carrots 1½ cup jaggery 6 cardamoms 1 handful raisins 1 handful nuts 1 handful cashews Add a little ghee to the frying pan and heat. Roast the cashew nuts until golden brown, and then add the raisins for a few seconds. Remove the cashews and raisins, and set aside. Grate the carrots and cook slowly on a low heat for about an hour along with the cardamom seeds, stirring continuously. Continue cooking slowly until almost dry. Add the jaggery and mix well, and continue to cook until dry enough. Remove from heat and add cashews and raisins and a few more cardamom seeds.
