Garlicky Chicken And Rice PREP TIME: 15 MINUTES TOTAL TIME: 5 1/4 HOURS SERVINGS: 6 4 leeks (2 lb total), white and pale green parts, coarsely chopped 2 lb total boneless, skinless chicken breasts and thighs 12 cloves garlic, smashed 1 1/2 c wild rice blend (we used Lundberg) 2 c reduced-sodium chicken broth 3/4 c dry white wine 2 oz pancetta, cubed 1 sm lemon, thinly sliced 1. Put half of the leeks in lightly oiled slow cooker pot. Layer evenly with chicken, garlic, and rice. Pour in broth and wine. Top with remaining leeks, pancetta, and lemon. 2. Cover and cook on low 5 to 6 hours or until chicken and rice are cooked through and tender. Season to taste with salt and pepper. 3. Spoon onto serving platter.
