George Sergeant (who changed his name to Sargent), an English migrant, and his Australian wife Charlotte began in a small way in 1886 with a bakery in Glebe selling bread, pies and cakes. George did the baking and Charlotte was in charge of sales in the shop. They moved their premises several times in the next few years always going to better venues. By 1909 the business was so successful that ‘Sargents’ became Sargents Ltd and moved into a newly built factory in Darlinghurst. They had become very successful by 1913, owning six cafes, thirty-six tearooms. 1. SARGENTS LTD - Corner Bourke & Burton Streets Darlinghurst c1962. 2. SARGENTS PIE SHOP - The Strand Sydney 1896.
