George loved pie. When he was diagnosed type II diabetes, he fretted because he could no longer eat rich pies. I made him yogurt pies with sugar free Jello, Cool Whip and lo fat yogurt. He loved Bananas so I would use sugar free vanilla pudding and Cool Whip to make refrigerated Banana pie. I didnt particularly care for the the Banana and he didnt like Coconut (I did) so I would make it half Banana and half Coconut and we would share. He loved Pumpkin, Mincemeat was his very favorite..... I made those at Thanksgiving and Christmas, like my dad, when ask if he wanted Pumpkin or Mince pie, he would answer yes. I make most of my pies sugar free now, people cant believe that sugar free can taste so good! When we first moved to Sikeston, we bought a house on Taylor Street. There was an apple tree in the back yard. I produced the tastiest green apples. When harvest time came, I would buy those frozen pie crusts, fill them with sliced apples, butter, cinnamon and sugar, wrap them in foil and fill the freezer with them. All I had to do was make a top crust or mix up a crumb crust and we had apple pie, If there was pie in the fridge, George would say, Do you hear that? I think that pie is calling my name, imagine that?
