Ghee Rice Biriyani is made using this ghee rice and the Masala as layers,with a slight difference in the amount of water added to the rice. In this method, rice is cooked adding just enough water to cook the rice (water is absorbed),the main ingredient ghee is also added. Ingredients 1.Basmati rice 2 cups(wash,drain and keep aside) 2.Water 4 cups 3.Ghee 3 tblsp 4.Cinnamon 1' piece 5.Cardamom 2 6.Bay leaf 1 7.Onion 1(thinly sliced) 8.Salt to taste Method -Keep water for boiling. -In the meantime,heat a pan and add ghee. -Add cinnamon stick,cardamom,bay leaf and after 3-4 seconds add the onion. -When the onions turn golden brown,add the rice. -Saute the rice for 3-4 minutes,now add the boiling water. -Let the rice and water boil on high flame for 1 minute.In between add salt(the water should taste a little salty at this stage) -Cover and cook rice on medium flame. -When the water is absorbed flip the rice. -Rice will be cooked by 15 minutes,off the flame and flip the rice once more and keep covered for 2-3 minutes. -Serve hot with Chicken or Mutton Curry. *Traditionally flavored short grains are used for ghee rice preparation.(In Malabar mostly people use that rice) *From 3tblsp of ghee I substituted 1 tblsp of ghee with 1 tblsp of refined oil. *Can garnish with fried onions,cashew nuts and raisins. *Some add a little grated carrot or green peas while cooking this rice.
