Gluten free friends: I would like to use up my Bobs Red Mill AP Flour before making my own, but I want to make it a little friendlier for cooking. Im wondering if anyone has ever tried mixing that particular brand with some other flours (rice flour? tapioca starch? coconut flour? almond?) to make it work a little better for baking and whatnot. Since most of the flour blends Ive seen dont have much in the way of bean flours, but Bobs Red Mill is entirely bean based, I really want to try to make a hybrid to use. Googling is failing me at the moment, because all I can find are sites dedicated to how horrible Bobs Red Mill is and I just want to use the 20 pounds of it I have because being wasteful sucks. Ideas? Suggestions? Advice?
