Gluten in general has gotten such bad press over the years, and bread in particular. Whats available at the supermarket should come with a health warning label, whether its the loaves on the shelf or the bags of industrial flour. Not only is there little to no nutrition in them, but the sugar and starch content is scary, to say the least. And dont get me started on their shelf life... But bread, what many have called the staff of life, definitely has a wholesome place on our tables, in our diets. The infinite combinations and variations of wholegrain flour, water, yeast, and salt. Maybe if we called the stuff at the store by a different name, it wouldnt be so confusing.
