Gluten intolerance is not the same thing as a wheat allergy. Gluten is a protein, and different proteins require specific enzymes to break them down into absorbable nutrients. Because most of what we ingest that contains gluten is cooked, the natural enzymes those foods contained are denatured. This means that our body, mainly our pancreas, has to produce the enzyme required to break down the gluten, which is known as DPP-IV. Over time, through our over consumption of wheat and other high gluten content foods, the resources our pancreas needs in order to create DPP-IV become depleted. What this means is that, when eaten, gluten sits in the digestive tract only partially digested. The body reacts to partially digested proteins with inflammation, which in this case causes the digestive tract to swell, also known as Celiac Disease.
