Going to be performing my first All Grain brew this weekend. I have a chili bin mash tun setup and have my heart set on doing a witbier. Looking at a 50/50 ratio of Pilsner malt and flaked wheat in a single infusion mash. Am I heading for a stuck mash? Should I change the ratio to 60/40?, Could do a hefe using malted wheat, but really want to do a witbier just a bit worried Im being ambitious being my first ag brew.
