Gone-A-Rye-A - A Farmhouse Pale Ale With Bite The roots of Biere de Saison lie in the Belgian farmhouse tradition of brewing small (~3% ABV) beers in the winter months for consumption by seasonal farm workers (Saisonniers in French) during the summer months. The beer served these workers would have, in many cases, taken the place of water as some communities lacked potable water. The post WWII mechanization of agriculture in Belgium both consolidated small farms and eliminated the need for seasonal workers. Freed from the dual constraints of providing a small beer to workers and having to run a farm, the surviving Saison brewers began to change the way they brewed their beer. Modern versions now make use of refrigeration to brew year round, modern laboratories to select and propagate yeast, and have grown in strength to over 6% ABV. Clandestines Gone-A-Rye-A is named for the the grain that gives it its spicy character and the mishap that happened the first time it was brewed. Rye malt is especially high in proteins which gelatinize during mashing. Because of the high percentage of Rye malt used in our version, the entire mash tun ended up looking like a big pot of jello!
